Plenty of leaf, short steeps, water off the boil. Gongfu is not ceremony for its own sake; it is simply the method that gets the most out of a leaf worth the trouble.

01 Rinse A few seconds of hot water over the leaf, poured away. It wakes the tea and warms the pot.
02 Steep short Ten to twenty seconds for the first infusion. Taste, then add seconds rather than leaf.
03 Go again A good leaf gives six or seven pours. The third is usually the one worth waiting for.
